Ingredients list for the cheesy chicken fritters recipe
- 1 1/2 lb (700g)skinless, boneless chicken breast, finely diced
- 2medium eggs
- 1/3cupalmond flour or coconut flour
- 1cupshredded mozzarella cheese
- 1/4 cup grated parmesan cheese, optional
- 3 Jalapeño peppers, seeded and finely diced
- 1 spring onion, sliced + for garnish
- 2 tablespoonsparsley, chopped
- 1/2teaspoon garlic powder
- A pinch of salt and fresh ground black pepper
- 1tablespoon olive oil, to fry

Directions
1.To make the cheesy chicken fritters recipe: Into alarge bowl, add diced chicken, almond flour, eggs, mozzarella, parmesan, spring onion, Jalapeño, parsley, garlic powder, salt, and pepper. Mix well to combine.
2. Heat oil in a large non-stick pan over medium-low heat. With an ice cream scoop or a large spoon, scoop into the chicken mixture and transfer it to the pan, then slightly flatten to make a fritter. Don’t overcrowd the pan, cook the fritters in batches to ensure even cooking.
3. Fry until golden brown on both sides, about 6-8 minutes. Make sure to cook the chicken fritters at medium-low temp, otherwise, they will burn on the outside and won’t get well cooked in the inside. Garnish with more sliced spring onion and serve immediately with your favorite dip: mayonnaise, chipotle aioli, Sriracha or even ketchup. Enjoy!

- You can customize the chicken fritters with any additional seasoningyou like!
- If you’re not on Keto or low carb diet, you can sub almond/coconut flour with all-purpose wheat flour.

How and how long to keep the chicken fritters?
The chicken fritters keep for 4 to 5 days in an airtight container in the refrigerator. Reheat gently in the microwave or on the stove in a non-stick skillet.

I was looking for a breakfast idea for my leftover grilled chicken thighs.I didn't have the cheeses you have listed so I improvised with cheddar and pepper jack. I fried them on both sides, 4 minutes each. I put some cheese on top to melt, fried an egg and made a breakfast sandwich. Delicious, hearty sandwich before getting the day started on our farm. Thank you for the yummy idea! :)

I wish this would have just called for ground chicken. I just cut it as small as I could, and they wouldn’t stay together. Otherwise very good tasting.

Did exactly as written, except I fried then in a bit more oil to make them extra crisp and used ground chicken. Will experiment with add ins next time!

These were fantastic. But instead of stovetop, I baked them in the oven. And I used a mini food processor to chop up/mince the chicken, which made the consistency perfect.

I just made these using rotisserie chicken which I cut up in small cubed. I added chopped red peppers and diced fresh spinach. I just put them in the fridge to firm up. Hopefully they will cook without breaking up.

These were falling apart as I fried them. Taste-wise - turned out pretty bland. Next time, I'd form patties ahead of time and put them in the fridge for an hour or so, and I'd add cumin and other spices.

Great recipe, even with substitutions. I was looking for something to make besides chicken salad with the canned chicken we buy at Costco. So I made these last night, but I substituted drained canned chicken for the cooked chicken breasts. I'm sure the original is even better, but even with canned chicken, my family really loved these. My hubby made a sandwich from the only two leftover ones and said it made a terrific sandwich as well. They tend to be picky eaters, so bonus kudos for wooing them!

I parcooked the chicken to be on the safe side. The flavor was fantastic. I had a hard time flipping them because I'm in a wheelchair. I will try to convert them to be cooked in the oven.

I used ground chicken and whole wheat panko, and it worked great. I left out the jalapenos but added in some chopped bacon. Really good with bbq sauce.

Used regular flour and ground chicken. These turned out great. Used a large ice cream scoop to help keep the size uniform and pressed them down with a spatula. WOW all around from my family.

Love these, but had to change a few things. I use regular flour and it works fine. I had trouble getting the chicken cooked before the outside of the Pattie’s got overcooked. It’s also very hard to cut raw chicken small enough. So I Eason and cook the breasts while then shred them. You can’t leave chunks. I actually use a hand spinning processor type gadget. Then mix everything and make Patties. Then they stick like crazy even in olive oil so we moved to a non stick griddle with cooking spray and they come out perfect without sticking.

The taste was good. I'm not very experienced at finely chopping chicken or jalapeños. It took me 2 hours cook this in batches, and they kept falling apart. I was really frustrated. Next time I'll buy ground chicken and pre-chopped jalapeños.

I have made something similar that turned out well using canned chicken. It might be good to cut it into smaller pieces. These cook well on a waffle iron like as well.
